Conservas de Cambados works from Galicia, one of Spain’s great shellfish regions, where cold Atlantic waters and tidal estuaries support a long tradition of harvesting clams, mussels, cockles, and other bivalves.
These razor clams are packed simply in brine, preserving their clean marine flavor and firm, delicate texture. Razor clams have a naturally sweet shellfish character, with a longer, leaner bite than cockles or mussels.
