Fangst Færøsk Laks No. 3 Faroe Islands Salmon
The Faroe Islands sit in the North Atlantic between Iceland and Scotland, where cold water and strong currents have made salmon farming an important part of the local seafood industry. Fangst's No. 3 uses Atlantic salmon raised in these waters, then brings it back to Denmark for canning.
This is the smoked version of Fangst's Faroese salmon. The fish is smoked over beech wood and packed with cold-pressed rapeseed oil and salt. It's a very Nordic combination, using rapeseed oil rather than olive oil and beech rather than the alder commonly used for smoked salmon in Alaska.
The salmon is rich and firm, with the smoke doing more than simply seasoning the fish. I like this one on dark rye with mustard and pickled onions. I spent a lot of time around salmon and this is one of my favorites.
