Fides Mackerel Fillets in Olive Oil

Mackerel is naturally rich and oily, which makes it particularly well suited to canning. Fides uses fillets rather than whole fish here, giving you clean pieces of mackerel without the skin or bones.

The preparation is about as straightforward as it gets: mackerel fillets packed in olive oil. The fish is firm, flavorful, and substantial, with the olive oil adding richness without introducing another sauce or seasoning.

I like this with boiled potatoes, parsley, red onion, and a little vinegar.
