Siesta Co. Mackerel in Yuzu Koshō

Yuzu koshō is a Japanese condiment made with yuzu peel, green chili, and salt. Here, Siesta Co. uses that idea with Spanish mackerel, organic extra virgin olive oil, yuzu peel, green pepper, and sea salt.

Mackerel has enough flavor and natural richness to stand up to the citrus and pepper. The yuzu is fragrant rather than sweet, while the green pepper gives the oil a mild, fresh heat. It is an unusual preparation, but an easy one to understand once the tin is open.
