White tuna is albacore, a species known for its pale flesh, firm flakes, and mild flavor. It’s the fish behind a lot of familiar canned tuna, but there’s a considerable difference between commodity tuna and a carefully prepared conserva.

Siesta Co. keeps this one simple, packing the white tuna in olive oil without adding much else to the equation. The fish is firm and substantial, and the olive oil gives it richness without obscuring the character of the albacore.

Use it anywhere you’d normally reach for good tuna. I particularly like it with white beans, thinly sliced red onion, parsley, and lemon.
