Güeyu Mar Chargrilled & Smoked Sardine Tails in Spicy Escabeche

Güeyu Mar is the conservas project of Spanish chef and restaurateur Abel Álvarez, whose work focuses on cooking seafood over live fire. The company has become known for applying restaurant techniques such as grilling and smoking to premium conservas.

This tin contains sardine tails that are first chargrilled and smoked before being packed in a spicy escabeche. The grilling adds depth and a very subtle char, while the escabeche contributes acidity and spice. 

Comparatively speaking, these sardines are a bit meatier than the rest of the wall.  The tails are softer than a lot of other selections but still have enough structure to not fall apart.  This is a great tin to put out on conservas boards as the smaller tail portions make the perfect two-bite snack.  Read more about building conservas boards in our Guide. 

Serve straight from the tin with toasted baguette.
