Güeyu Mar Chargrilled Squid in Ink Sauce

Güeyu Mar is the conservas project of chef Abel Álvarez, whose restaurant on Spain's Asturian coast is known for cooking seafood over live fire. The conservas line applies grilling and smoking techniques rarely seen in traditional tinned seafood.

This squid is chargrilled before being packed in its own ink sauce, a preparation rooted in the long tradition of calamares en su tinta found throughout northern Spain. The grilling adds a roasted character to the squid, while the ink sauce brings salinity and richness without obscuring the seafood itself.

Squid in ink is a familiar dish in Spanish coastal cooking, but the addition of live-fire cooking gives this tin a character distinct from more conventional versions.

Serve with warm bread to mop up the sauce.
