Pinhais Spiced Sardines in Olive Oil

Pinhais uses the classic Portuguese spiced-sardine mix here: chili, carrot, cucumber pickle, bay leaf, and clove. The sardines are firm and broad-flaked, with the spice and aromatics settling into the oil around them.

Serve these with boiled potatoes and parsley, grilled bread, or rice with a spoonful of the seasoned oil from the tin.
