Firm tuna with the savory red pepper character of pimenta da terra, the pepper paste used throughout the Azores. It gives the oil a little color, salt, and depth.

Serve with warm rice, boiled potatoes, eggs, grilled bread, or white beans with parsley and a little vinegar.
