Siesta Co. Small Sardines in Yuzu Koshō

Small sardines have a softer texture and a little more delicacy than their larger cousins. Siesta Co. gives them a very different treatment here with yuzu koshō, bringing citrus, green chili, and salt into the tin.

The yuzu adds a sharp, fragrant edge while the chili stays fairly restrained. It works especially well with the natural oiliness of the sardines and makes this one of the brighter, more aromatic tins on our wall of fish.

Serve over warm rice with cucumber and scallions.
