Wildfish Cannery Smoked Geoducks

Wildfish Cannery smoked geoduck from Southeast Alaska. Geoduck is a large Pacific clam with a firm chew, clean brine, and a commanding presence. Wildfish cures the clams with salt, cane sugar, garlic, and white pepper before smoking them over alderwood.

This is a good tin for people who already like shellfish and want something unusual.  To my knowledge, this small Alaskan cannery is the only place in the world smoking geoducks.

Serve simply with buttered toast, rice, or soft scrambled eggs.
