Wildfish Smoked King Salmon

King salmon, also known as Chinook salmon, is the largest of the Pacific salmon species and is prized for its rich flavor and exceptionally high natural oil content. That abundance of healthy fat gives the fish a silky texture that has made it one of the world's most sought-after wild salmon.

Wildfish Cannery, based in Klawock, Alaska, prepares this king salmon in small batches using sustainably harvested wild fish. After careful filleting, the salmon is naturally smoked over alder wood, a traditional Pacific Northwest hardwood that lends a gentle smokiness while allowing the flavor of the fish to remain at the forefront.
